Yalikoy Meatballs


Product Description and Distinguishing Features:

Yalıköy Köfte is a type of meatball made by mixing minced meat with stale bread, spices, salt, and garlic. The resulting dough is then shaped into small, elliptical pieces and deep-fried in hot oil. Each köfte weighs approximately 30-35 g, has a length of 5-6 cm, and a thickness of 2-2.5 cm.

Yalikoy Meatballs

Yalıköy Köfte is prepared using the front leg and chest meats of male or non-lactating female cattle aged between 6-24 months. Care is taken to ensure that the meat is free of sinew and has minimal fat content.

Production Method:

Ingredients for 10-12 servings of Yalıköy Köfte:
- 1 kg beef (front leg and chest) - 600 g bread (stale, left for 1 day) - 5 g black pepper - 5 g cumin - 5 g meatball seasoning - 10 g salt - 40 g sweet red pepper powder - 40 g hot red pepper powder - 5 g garlic

The beef, cleaned of bones, cartilage, and tendons, is diced into 10-15 cm cubes. Stale bread left for 1 day is finely chopped, mixed with the meat, and ground. It is placed in a large bowl, and a well is formed in the center. Meatball seasoning, cumin, black pepper, salt, hot and sweet red pepper powder, and finely chopped garlic are placed in the well, and all ingredients are kneaded until well mixed. Taking pieces from the dough, which reaches a non-sticky consistency, oval-shaped köfte are formed by hand. Each köfte should weigh approximately 35-40 g, be 6-7 cm in length, and have a thickness of 2.5-3 cm.

After resting for 1-2 hours, the prepared köfte are deep-fried in hot oil for an average of 5-6 minutes (until the meat turns brown). Cooked köfte weigh approximately 30-35 g, are 5-6 cm in length, and have a thickness of 2-2.5 cm. Optionally, hazelnut oil obtained from hazelnuts grown in the geographical region can be added in a 5-10% ratio to the frying oil.The fried Yalıköy Köfte is plated and served with a salad consisting of onions, tomatoes, green peppers, and lettuce.
