Product Description and Distinctive Features:

Çarşamba Kıvratması (Çarşamba Twist) is made from a dough consisting of yogurt, vegetable oil, water, eggs, baking soda, and wheat flour. The filling includes powdered sugar, walnut kernels, and hazelnut kernels. The unique shape is achieved by rolling out the dough with starch, then winding it around a rolling pin, and finally cutting it into square shapes. It is baked with melted butter and served without syrup.

Çarşamba Kıvratması has a long history and is commonly consumed on special occasions. The preparation of the dough and the shaping of the square require skill and expertise, leading to its association with a specific geographical region.

Production Method:

The components used in the production of Çarşamba Kıvratması are as follows:
- 200 g yogurt - 200 ml vegetable oil - 200 ml water - 2.5 g baking soda - 3 eggs - 1 kg wheat flour - 1/2 kg starch (for rolling out the dough) - 750 g walnut kernels - 250 g hazelnut kernels - 1/2 kg powdered sugar - 750 g butter (for the topping)

The yogurt, vegetable oil, water, eggs, baking soda, and flour are mixed and kneaded into a dough with the consistency of an earlobe. After resting for 1 hour, the dough is divided into egg-sized balls and rested for another 10 minutes. The rested balls are rolled out using starch to a thickness of 0.5 mm and a diameter of approximately 80 cm. The prepared filling, a mixture of powdered sugar, walnut kernels, and hazelnut kernels, is spread over the dough. The dough is rolled around a rolling pin, not too tightly or loosely. The last part of the dough is folded inward, and the rolled dough is removed from the rolling pin, creating a twisted shape. It is arranged on a flat tray and cut into square pieces. Melted butter is poured over the top. After baking at 180°C for 45 minutes, Çarşamba Kıvratması is ready to be served, without syrup.
