Description and Distinguishing Features of the Product:

Van Ayran Aşı (Yogurt Soup); is a dish prepared with a mixture of wheat flour, yogurt, egg, water, and salt, to which crushed wheat, butternut squash, butter, stone leek, or spinach is added. It is served hot, topped with finely chopped fresh coriander. Since stone leek grows in spring and summer, when it is produced outside of these seasons, spinach is used in Van Ayran Aşı.

The history of Van Ayran Aşı dates back, and it holds a significant place in the culinary culture of the Van province. Therefore, it has a connection with the geographical boundary due to its popularity.

Production Method:

Ingredients for Van Ayran Aşı (for 8 people):
200 g crushed wheat 1 mediumsized butternut squash 100 g stone leek or 100 g spinach 500 g yogurt 30 g wheat flour 1 egg Fresh coriander 100 g butter Water 10 g salt

Preparation:
Crushed wheat and cubed butternut squash are boiled separately in water. In another pot, 800 ml of water, flour, yogurt, salt, and egg are mixed well and boiled over medium heat while stirring constantly. Once the mixture boils, it is simmered after adding the boiled wheat and squash. After simmering for 5 minutes over low heat, diced stone leek/spinach, approximately 1.5 cm in length, is added. When the stone leek/spinach softens, butter is added and boiled for an additional 5 minutes. The serving of Van Ayran Aşı is done hot after adding finely chopped fresh coriander on top.
