Urfa Zerde (Şanlıurfa Zerde) is a traditional and indispensable dessert made from rice and sugar, with haspir (Carthamus tinctorius L.) flower petals used as a coloring agent. Records from Urfa Şer’iyye registers, specifically entries 204, 205, 218, and 225, between the years 18451899 highlight endowments established in Urfa, and Urfa Zerde is mentioned among the offerings.

Urfa Zerde (Şanlıurfa Zerde) is a famous product that has become synonymous with the region. In the production method, haspir (Carthamus tinctorius L.) flower petals are used to provide color and aroma, making it distinct from similar desserts.

Production Method:

Ingredients:
The following measurements are the minimum that can be used. 1 cup of rice 22.5 cups of granulated sugar A handful of haspir flowers 1 coffee cup of rose water or 1 drop of rose oil (optional)

Preparation:
In a pot, approximately 45 cups of water, depending on the type of rice, should be boiled. After that, washed rice should be added and cooked. Sugar is added, and it should be cooked for about 10 minutes over low heat. Separately, haspir (Carthamus tinctorius L.) flowers should be dissolved or boiled in about 1 cup of hot water. Once the plant imparts its color to the water, strain it and add the liquid to the pot. When it reaches a medium consistency, optionally add rose water or rose oil, transfer it to a bowllike container, let it cool, and then serve.
