Urfa Stuffed Meatballs


Product Description and Distinguishing Features:

Şanlıurfa Stuffed Kebab: It is a regional delicacy produced by filling the outer layer made of bulgur with a previously prepared minced meat filling and then frying it. Its production requires manual skill and expertise. It is rumored that Stuffed Kebab in Şanlıurfa originated from Çiğ Köfte (raw meatballs). In Şanlıurfa, the minced meat Çiğ Köfte prepared there needs to be consumed immediately. However, according to the legend, this dish was created when Çiğ Köfte mistakenly prepared long before iftar during Ramadan was used, and it spread to Şanlıurfa cuisine.

Urfa Stuffed Meatballs

Preparation of Urfa Stuffed Kebab Kebab:

First, the filling and then the outer part of the kebab are prepared. The prepared filling is placed inside the kebabs shaped like cups, and after closing the top, they are fried. 750 grams of minced meat are sautéed in its own fat in a pan. Clarified butter is added, and finely chopped onions are sautéed. After that, it is taken off the heat, and black pepper, salt, and chopped walnuts are added. The mixture is cooled.

In a separate container, onions divided into four pieces, isot (a type of chili pepper), salt, and black pepper are mixed. "Kara et" (a special type of meat) is added, and gradually water is added until the mixture becomes a paste. It is kneaded until it reaches a doughlike consistency. Then, bulgur is added, and if necessary, water is added, and the mixture is kneaded for another 30 minutes. After softening and reaching the right consistency, four pieces of onions inside the mixture are removed and not used.

Large pieces of the kebab mixture are taken, rolled into a ball, held in the palm of one hand, and hollowed with the index finger of the other hand. The filling is placed inside, the opening is pressed, and it is sealed. The kebabs are fried in hot oil until all sides turn brown, then served hot. They are accompanied by ayran (yogurtbased beverage) and, depending on the season, regional vegetable salad, Urfa Eşkili (a local dish), or pickled green plums salad.
