The lamb meat used in the product is produced from the meat of the Ivesi breed lambs grown in the region, and the eggplants are the geographically registered Birecik Eggplants. The clarified butter is made from the milk of small livestock raised in the Şanlıurfa region. Production Method: Ingredients: 4 kilograms of Birecik Eggplants 250 grams of lean minced meat (lamb meat) 1 teacup of Şanlıurfa Clarified Butter (Urfa Butter) 34 cloves of garlic 1 teaspoon of salt Preparation: 1. First, grill the Birecik Eggplants. Peel the garlic cloves and mash them with salt. Simultaneously, sauté the minced meat. 2. Peel the grilled eggplants and dice them with a knife. Then, mash the eggplants until they turn into a paste. Add the mashed garlic to the eggplants and blend the mixture thoroughly. 3. Transfer the pastelike mixture to a flat plate, create numerous indentations using fingertip, and pour Şanlıurfa Clarified Butter over it. 4. Spread the sautéed minced meat, while still hot, over the pastelike eggplant mixture. Pour wellheated Şanlıurfa Clarified Butter (Urfa Butter) into the indentations. Serve hot.
