Urfa Lebenisi


Description and Distinguishing Features of the Product:

Urfa Lebenisi, made with a unique recipe specific to Şanlıurfa, is a soup that is not only easily digestible but also has a refreshing quality; it is served cold. The name "Lebeni" is derived from the Arabic word "leben," meaning milk. It is made using yogurt, pounded wheat, chickpeas, and salt.

Production Method:

To make Urfa Lebenisi, 100g of chickpeas and half a kilogram of pounded wheat are soaked overnight to soften. The softened pounded wheat and chickpeas are then cooked by adding twice the amount of water. After cooking and absorbing the water, pounded wheat and chickpeas (while still boiling) are mixed with 2 kilograms of yogurt that has been beaten separately with approximately 10g of salt. After adding yogurt, the mixture is constantly stirred until it reaches the boiling point again. The boiling Urfa Lebenisi is then filled into bowls and placed in the refrigerator. It is served cold before the main course.
