Urfa Kazan Kebab


Description and Distinctive Features:

Urfa Kazan Kebab, a local dish that has been delighting taste buds for centuries, is prepared by cutting eggplants and tomatoes without separating them, filling the cuts with stuffing, and arranging them in a pot for cooking. The dish is enhanced by the use of locally produced clarified butter. The lamb meat used in the dish is sourced from the İvesi breed, and the clarified butter is made from the milk of small livestock raised in the Şanlıurfa region.

Stuffing Preparation:
Mix minced meat with half a tablespoon of tomato paste, finely chopped onions, fresh red pepper (isot), grated two tomatoes, Şanlıurfa Pepper (dried isot), black pepper, and salt.

Preparation:

Cut off the tops of the eggplants and, without separating them, make approximately 1-centimeter crosswise cuts, ensuring the bottom stays connected. Three tomatoes are also sliced in the same manner.The prepared minced meat mixture is filled into the sliced eggplants and tomatoes, and the arrangement is placed in a pot for cooking. Tomato paste, salt, and clarified butter are added to the top of the dish. Cook over low heat until all the liquid is absorbed.Once cooked, the Urfa Kazan Kebab is ready to be served.
