Tunceli Sorbik Soup

The Tunceli cuisine is primarily based on grain products and animal-derived foods. This is because daily life is shaped by agriculture and animal husbandry. One of the most well-known dishes of the region is "şorbik" soup. This dish, especially served at weddings, is synonymous with Tunceli and is prepared with beef, chickpeas, and either milk or buttermilk.

Tunceli Sorbik Soup

Production Method:

Ingredients:
500g Beef, diced 100g Butter 200g Chickpeas (soaked overnight and then boiled) 500ml Water 400ml Milk 100g Onion, finely chopped 1015g Salt

Instructions:
1. Diced beef is cooked in a pot over low heat until the water is absorbed. 2. Butter is added to the beef with absorbed water and sautéed for 12 minutes. 3. Finely chopped onions, drained chickpeas, and salt are added. 4. Boiling water is added, and it is left to simmer over low heat for 4050 minutes. 5. Warm milk is added, and after 34 minutes, it is removed from heat and served.
