Senykent Banagi Product Description and Distinctive Features: Senirkent Banağı is a traditional dish with a significant place among the local cuisines of Senirkent district. It is prepared using bone-in hind leg meat from beef, lamb/sheep, or goat, split beef shank bone, water, salt, black pepper, and optionally, flatbread, stale bread, or dried yufka (thin Turkish flatbread). The historical Senirkent Banağı has a unique quality tied to its geographical origin, especially in the method of cooking the meat with the beef shank bone. The production of Senirkent Banağı requires a skilled approach, and its reputation is closely connected to the geographical boundaries of Senirkent. Production Method: The meats used in the production of Senirkent Banağı preferably come from beef, goat, or lamb/sheep raised in Senirkent district. The necessary ingredients for preparing Senirkent Banağı are as follows: - 2 kg bone-in hind leg meat (beef, lamb/sheep, or goat) - 1 split beef shank bone - 2.5 liters of water - Onion - 3 pieces of flatbread (each weighing 50 g) or an equivalent amount of sliced stale bread or dried yufka - Salt - Black pepper The trimmed hind leg meat is washed, and the split beef shank bone is rinsed to remove any bone fragments. The bone-in hind leg meat and split beef shank bone are placed in a pot filled with water, and the boiling process begins. During boiling, any foam that accumulates on the surface of the water is skimmed off and discarded. Onions, sliced into rings, are seasoned with black pepper and set aside. Once the water in the pot begins to boil, the seasoned onions are added to the pot, left to simmer for a while, and then removed from the pot. When the meat becomes tender enough to be easily shredded by hand, it is taken out of the pot and separated into pieces manually. At least 12 hours prior, baked flatbread, stale bread, or dried yufka is cut into bite-sized pieces and arranged in a single layer on a flat plate. The shredded meat, along with its broth, is poured over the flatbread/stale bread/dried yufka.Senirkent Banağı is consumed hot and is not sold frozen.
