Product Description and Distinctive Features:

Pamukova Walnut Paste; a sweet confection produced by boiling sugar syrup and adding an equal mixture of walnut kernels and semolina, usually made and preferred on special occasions. In the production of Pamukova Walnut Paste, no food additives, flavorings, or aroma-enhancing food components are used except for citric acid or lemon juice.Pamukova Walnut Paste has a sweet taste, a brownish color, a non-homogeneous consistency, and is typically enjoyed as a sugary delicacy. The product distinguishes itself from others through its unique production method and is associated with the Pamukova district.

Production Method:

Components of Pamukova Walnut Paste:
Water, white granulated sugar, semolina, walnut kernels, and citric acid (E330) or lemon juice.

Preparation of Pamukova Walnut Paste:
Preferably, copper boiling cauldrons are used in the production of Pamukova Walnut Paste. For a mass of 9 kg, 1 liter of water is heated. 4 kg of white granulated sugar is added to the heated water to obtain a thick syrup. Approximately 10 grams of citric acid (E330) or lemon juice is added just before the mixture boils. Once the syrup reaches the desired consistency, it is taken off the heat and allowed to cool and rest.

2 kg of semolina is mixed with 2 kg of coarsely chopped walnut kernels. Walnuts preferably grown in the Pamukova district are used. Wooden spoons are used during mixing.The mixture of semolina and walnut kernels is added to the syrup. After ensuring thorough mixing between the syrup and the semolina-walnut kernel mixture, an additional liter of hot water is added. The semolina is fully roasted with water. After cooking the mixture over low heat for about 10 minutes, the heat treatment is terminated. The cooked product is poured into trays. Powdered sugar is spread beneath the tray to cover the surface. The mixture is thoroughly compressed onto the tray by applying pressure with a rolling pin. The product is allowed to cool and rest for about 2.5-3 hours at room temperature.

It is typically cut into diamond-shaped pieces similar to baklava slices for serving. Pamukova Walnut Paste is packaged using materials suitable for food contact and presented to consumers with label information in compliance with relevant regulations. The product should be stored in a cool, odor-free, and dry environment. The recommended consumption period for packaged products is a maximum of 3 months from the production date. After the packaging is opened, it is advisable to consume the product within 1 week.
