Osmaniye Zorkun Tava Product Description and Distinctive Features: Osmaniye Zorkun Tava; is a meat dish produced in the Zorkun Plateau of Osmaniye province, using lamb meat, tomatoes, red onions, green and red peppers, garlic, hot/sweet red pepper powder, and salt. The meat used in production is obtained from the leg and foreleg parts of lambs. In the production of Osmaniye Zorkun Tava, liquid oil and tomato paste are not used. Additionally, red onions, which have a more intense flavor, are used to achieve a spicier taste.The history of Osmaniye Zorkun Tava dates back to the 1960s. It started as a local dish among artisans and gradually spread throughout the entire Zorkun Plateau, becoming an essential part of the culinary culture. For these reasons, it is associated with a geographical region and has gained recognition. Production Method: The necessary components and production stages for making Osmaniye Zorkun Tava are outlined below. - 1 kg lamb cubes - 100 g tail fat - 2 red onions - 1 kg tomatoes - 3 green peppers - 2 red peppers - 15 cloves of garlic - 10 g hot/sweet red pepper powder - 20 g salt The lamb cubes, obtained from the leg and foreleg parts, are diced and placed in a tray. Finely chopped onions, garlic, and peppers are added on top. Salt and red pepper powder are sprinkled. The skins of the tomatoes are peeled, diced, and spread over the mixture. The tomatoes are then covered with tail fat. The tray is covered with a metal sheet and baked in a stone oven for about 1.5 hours. Osmaniye Zorkun Tava is served hot.
