Osmaneli Quince Delight is a fruit delight produced with quinces that are boiled and turned into a puree. When Osmaneli Quince Delight is tasted, the pulpy texture of quince puree and the intense aroma of quince create the sensation of having fruit pieces in the delight. The jelly-like appearance of Osmaneli Quince Delight is low, with minimal glossiness and a matte-brown color, and the outer layer is coated with coconut.The production of Osmaneli Quince Delight, which requires skill and expertise, has become synonymous with the geographical region due to the historical significance of Osmaneli as a major quince production center.

Production Method:

Quinces harvested every year in November and December within the geographical boundary are minced and boiled for 7 minutes at a temperature of 75 °C. To prevent enzymatic discoloration in the boiling water, 0.1% citric acid is added. After cooling, the boiled quince puree is stored at -18 °C and used throughout the year in quince delight production.

Preparation of Osmaneli Quince Delight: Ingredients (To obtain approximately 50 kg of product): - 39 kg drinking water - 30 kg white sugar - 20 kg quince puree - 3.6 kg cornstarch - 70 g citric acid

In the delight cooking pot, starch, white sugar, drinking water, and citric acid are added, and the mixture is continuously stirred and boiled at 105-110 °C for 2 hours. Then, quince puree is added to the boiling pot, and the boiling process continues with stirring for an additional 1 hour and 45 minutes.

Once the cooking process is complete, the mass of delight is poured into trays, each containing approximately 12.5 kg of delight, sprinkled with starch, and left to cool at room temperature for 6-8 hours. The cooled delight masses are then placed on marble countertops, and their surfaces are coated with coconut by grating.

Cutting is done using delight scissors. The delight is cut into cube shapes, and the surfaces are coated again with coconut grating.Osmaneli Quince Delight can be stored for 6 months in hygienic conditions, at a temperature of 15-16 °C, in a dry environment.
