Muş boasts a rich cuisine where meat, influenced by animal husbandry, holds a fundamental position in the local diet. Due to the prolonged winter season, families begin procuring winter food supplies before the arrival of autumn. Vegetables are prepared for winter, and cabbage, locally referred to as "kelem," is frequently consumed in the region. Cabbage (kelem) is stored for winter in several ways, with "çorti" being the most common. Çorti, a type of pickled cabbage, is made by packing small-cut cabbage leaves into jars with savory, red pepper, lemon, and salt, along with the addition of water. Çorti is consumed both as a side dish and in a dish called "çorti yemeği," where cracked wheat and meat are added to the çorti. Muş Çorti Yemeği has been prepared in the region for many years and has become synonymous with the area.

Production Method:

Ingredients:
- 1 kg Muş çorti pickle - 750 g lamb shank - 150 g cracked wheat - 60 g butter - 20 g tomato paste

Procedure:
1. For the çorti soup, chopped lamb shank is sautéed in butter until it changes color. 2. Tomato paste is added, and it is sautéed for 1-2 minutes. 3. Çorti pickle and cracked wheat are placed in the pot, and enough water is added to cover them. 4. The pot is left to simmer over medium heat for approximately one hour. 5. When the meat easily separates from the bone, it is considered cooked.
