Product Description and Distinguishing Features:

MMuş has a rich cuisine, where meat plays a fundamental role in local nutrition due to the influence of animal husbandry. Since the winter season is quite long, families begin to procure food supplies for the winter before the arrival of autumn. Vegetables are prepared for the winter. Cabbage, commonly referred to as "kelem" in the region, is frequently consumed. According to legend, when Lokman Hekim (Lokman the Wise) visited Muş, he observed that the majority of the people were eating cabbage. Thinking that he would have much work to do in the spring when most of them fell ill, he was surprised to find out that in the spring, when the snow melted, people consumed a plant called "uçkun." He investigated this plant and eventually discovered that it eliminated the illnesses that could arise from excessive consumption of cabbage. Lokman Hekim expressed this truth by saying, "God has given the ailment, and with it, He has provided the cure." As seen, cabbage consumption has been widespread in the region for many years and has become synonymous with the area.

Mus Chorti Pickle

Cabbage (kelem) is preserved for winter in several ways, with "çorti" being the most common. Çorti, a type of pickled cabbage, is made by packing small-cut cabbage leaves into jars with savory, red pepper, lemon, and salt, along with the addition of water. To give çorti a sour taste, chickpeas or sourdough are used. Çorti is distinguished from other pickles by not containing vinegar. It is consumed both as a side dish and in a dish called "çorti yemeği," where cracked wheat and meat are added to the çorti.

Production Method:

Ingredients:
- 1 large white cabbage (3-4 kg) - 280 g rock salt - 15-20 g red pepper - 15-20 g savory - 1 lemon - Water (boiled) - 50 g chickpeas
Procedure:
1. Cleaned cabbage is cut into small pieces. 2. The cabbage is packed into jars along with the remaining ingredients. 3. The top is filled with boiled and cooled water. 4. After waiting for 1-2 weeks, it becomes ready for consumption.
