Mesudiye Dried Bread


Product Description and Distinguishing Features:

Mesudiye Dry Bread / Mesudiye Golit is a type of bread produced in the Mesudiye district using bread wheat flour, dry yeast (Saccharomyces cerevisiae), salt, and water. It is ring-shaped, with an outer diameter of 25-30 cm and an inner diameter of 15-20 cm. Optionally, it can be divided into pieces of 10-15 cm for complete drying. The weight of each piece is 100-150 g.

The dough of Mesudiye Dry Bread / Mesudiye Golit is allowed to ferment for 15-20 minutes. It is then baked in a stone oven at 170°C. The baking and drying processes are carried out gradually in multiple stages. No additives such as benzoic acid or sorbic acid, which prevent staleness, are used in its production.Mesudiye Dry Bread / Mesudiye Golit can be consumed either in its dry form or after being moistened.

Production Method:

Ingredients:
- 35 kg bread wheat flour - 20 liters water - 100 g dry yeast (Saccharomyces cerevisiae) - 500 g salt

The yeast, salt, and bread wheat flour are added to warm water, and the mixture is kneaded in a dough mixer or by hand for about 25 minutes until a homogeneous and soft dough is obtained. After resting for 15-20 minutes for fermentation, the dough is divided into 300 g portions and allowed to rest for an additional 10 minutes.

With the portions in hand, ring-shaped pieces are rolled out with an outer diameter of 35-45 cm and an inner diameter of 25-30 cm. Baked in a preheated stone oven at 170°C for 15 minutes until partially baked, then taken out of the oven to cool. Once cooled, they are baked again for another 15 minutes and removed from the oven. After cooling, the bread is kept in the oven for an additional 15 minutes for tempering and then taken out. The dry bread, with an outer diameter of 25-30 cm and an inner diameter of 15-20 cm, is obtained.

The bread is left in a 50°C stone oven for 4-5 hours for complete drying. Optionally, it can be divided into pieces of 10-15 cm and baked again. After being taken out of the oven, it is allowed to cool for 30-60 minutes.Mesudiye Dry Bread / Mesudiye Golit is packaged in airtight and food-safe packaging, typically in 1-2 kg packages, and is ready for sale. When stored in a cool and dry environment, its shelf life is 3-5 years.
