Production Method: Malatya Pirpirimli Spicy Ayran / Malatya Purslane Spicy Ayran is produced using purslane grown in the Malatya region. The components of the product are as follows: - 2 kg of yogurt or 800 g of strained yogurt - 1 bunch of purslane - 300 g of red pepper flakes - 1 liter of water - Salt (optional) Purslane is cleaned from the root and thoroughly washed, then left to drain. Purslane can be used raw or boiled, depending on personal preference. Yogurt and salt are whisked well, and water is added. Red pepper flakes, cut lengthwise, and purslane are added to the mixture. It can be diluted with water as desired. The prepared mixture is placed in food-safe clay crocks, covered, and left to ferment at 4°C for 15-18 days to complete the fermentation process.
