Konya Hemp Helva is a type of helva prepared by roasting hemp seeds with walnuts, almonds, and pistachios, then roasting them again, and pouring hot grape molasses over them. The mixture is cooled in a tray dusted with chickpea flour.Having its roots in the Seljuk period, Konya Hemp Helva was considered an integral part of the entertainment culture during cold winter nights, often described as an "entertainment treat." Konya Hemp Helva maintains its significance within Konya cuisine and has a connection to its geographical boundaries.

Production Method:

Ingredients: - 200 ml grape molasses - 250 g hemp seeds - 150 g pistachios - 150 g almonds - 150 g walnuts - 150 g sesame seeds - 50 g chickpea flour

Grape molasses is boiled over low heat. Hemp seeds are roasted in a pan until their aroma is released. Walnuts, almonds, and pistachios are coarsely crushed and added to the roasted hemp seeds. After roasting together, hot molasses is poured over the mixture. Chickpea flour is sprinkled on the bottom of a tray. The molasses mixture is poured onto the tray with chickpea flour. Konya Hemp Helva is served at room temperature and should be stored in a dry place away from direct sunlight. Its shelf life is approximately one month.
