Production Method:

Ingredients for 4 servings of Konya Çirli: - 150 g lamb ribs (bone-in and cut into 4 cm pieces) - 200 g diced lamb - 200 g seedless raisins - 100 g onion - 1 liter water - 25 g butter - 10 ml vegetable oil - 5 g tail fat - 3 g red pepper - 3 g black pepper - 10 g white sugar - 2 g salt

Preheat the pot and add vegetable oil and tail fat, stirring for 2 minutes. Add diced lamb and lamb ribs. Sauté for approximately 10 minutes until the meats turn pink. Peel the onions and add them whole to the pot along with red pepper. Add water and simmer for about 20 minutes until the meat softens. Add raisins and cook for an additional 30-35 minutes until the raisins swell. Add black pepper and sugar, then simmer for another 5 minutes before removing the pot from the heat. Let Konya Çirli rest for 10 minutes to allow the flavors to blend. Serve Konya Çirli hot.
