Kilis Kırk Semseği is a pastry produced by placing the filling between layers of dough made from flour, egg, grape molasses, water, and salt. The filling, consisting of rice, onion, minced meat, salt, black pepper, and Kilis Olive Oil, is added at 15 cm intervals, cut into squares measuring 15 x 15 cm, and fried in Kilis Olive Oil, which is registered with the geographical indication number 1021. The history of Kilis Kırk Semseği dates back to ancient times and holds a significant place in the culinary culture of Kilis province. Additionally, it is known as "hayrat semseği" as it is traditionally made and distributed forty days after a person's death in the region. The production process is specific to the geographical region, establishing a connection between the geographical boundary and its renown.

Production Method:

Ingredients: - 500 g special-purpose wheat flour - 1 egg - 14 ml grape molasses - 300 ml water - 16 g salt - 80 g rice - ½ kg lean minced meat - 1 onion - 6 g black pepper - 20 ml Kilis Olive Oil - Kilis Olive Oil (for frying)

Preparation of the Filling: Washed rice is boiled with water on low heat until the water is absorbed. In a pan, Kilis Olive Oil, finely chopped onions, and minced meat are sautéed until the meat loses its water. After sautéing, salt, black pepper, and boiled rice are added, mixed, and set aside.

Preparation and Cooking of the Dough: Egg, molasses, water, and salt are mixed in a bowl until a soft dough is obtained, then kneaded and left to rest at room temperature for 20 minutes. The rested dough is divided into two portions, and each portion is rolled out thinly with a rolling pin. The first rolled-out dough is filled with the prepared filling in clusters at 15 cm intervals, and the second dough is placed on top, sealing the filling inside. The filled dough is then cut into squares measuring 15 x 15 cm. The squares are fried in Kilis Olive Oil at 180 °C until lightly browned. Kilis Kırk Semseği is served hot.
