Izmir Shambali


Product Description and Distinguishing Features:

İzmir Şambalısı is a type of dessert prepared by baking a dough made with semolina (wheat semolina), sugar (powdered sugar), milk or yogurt, starch, and baking powder in a suitable technique in a tray. After baking, it is obtained by pouring syrup over it. Before being placed in the oven, the sweet dough can be adorned with almonds or pistachios on top.

Production Method:

To prepare the syrup, water and sugar are boiled. After it starts boiling, it is kept at boiling temperature for 10 minutes. Lemon or citric acid and vanilla are added, and it is boiled for a maximum of five minutes. Then, it is left to cool.

Semolina, sugar, starch, and baking powder are thoroughly mixed. Then, milk or yogurt is added to this mixture, and it is kneaded until a homogeneous dough is obtained.The prepared dough is placed in a tray and pressed by hand to spread evenly with a thickness of 2.5 - 3.5 cm. It is crucial that the dough spreads evenly on the tray.

Almonds or pistachios (with at least one pistachio and almond on each slice) are arranged evenly on the dough by pressing lightly. After baking in a preheated oven at 180°C for 40-45 minutes, it is sliced into a rectangular shape in the tray, and an additional 15 minutes of baking is applied.

Once the baking process is complete, the pre-prepared and cooled syrup is poured into the tray, covering the tray base up to a height of 0.5-0.6 cm with syrup. The product is left to cool.After İzmir Şambalısı is produced, it can be stored for approximately 1 week at a temperature of approximately 15-20°C if kept in the tray and under suitable conditions.
