Hopa Laz Pastry


Description and Distinguishing Features of the Product:

The Laz people, who have been living in the eastern part of the Black Sea Region for over 2500 years, have preserved their culture in this area. Throughout this period, they have embedded their culture into the region, and the area has become synonymous with this culture. Hopa Laz Börek is a product obtained by cooking after the dough, which is rested, is rolled out into thin sheets; and a specially prepared filling is placed in the middle of the sheets.

Production Method:

Ingredients: 1 egg 2 tea glasses of milk ½ tea glass of water 3 cups of flour 1 teaspoon of salt For the filling: 3.5 kg of milk 4 cups of sugar 2 cups of flour 1 slightly heaping teaspoon of salt 4 eggs 3 heaping tablespoons of yogurt 1 teaspoon of ground black pepper 350 grams of butter for use during baking

Instructions: While preparing the dough, all the ingredients are mixed to form the dough, and it is left to rest. Meanwhile, the filling is prepared. In a pot on the stove, milk, sugar, flour, and salt for the filling are mixed and heated until the filling is just about to boil, then it is removed from the heat. Next, 4 eggs, 3 heaping tablespoons of yogurt, and 1 teaspoon of ground black pepper are thoroughly whisked and added to the filling mixture. Then, 8 sheets of dough are rolled out from the previously prepared dough. The baking tray is thoroughly greased, and 4 of the dough sheets are placed inside. The filling is poured over the sheets, and 1 cup of sugar is added on top of the filling. Approximately 350 grams of butter are poured over the filling.

The prepared pie is baked in a preheated oven for 45 minutes. After removing it from the oven, the remaining 4 dough sheets are separately greased and placed on top of the filling. The pie is baked in a preheated oven at 170°C until the sheets turn golden brown. Once done, it is taken out of the oven and covered with a cloth. The product is served cold.
