Gölhisar Roast is a special roast produced in the Gölhisar district using a unique cooking method, consisting of beef, inner fat, and salt. It does not contain any other additives. Typically, it is cooked over a fire fueled by oak and juniper wood and prepared on a metal griddle.The meat used in the production of Gölhisar Roast is taken from the egg portion of the beef hindquarters. It is used without marination or aging.

Production Method:

In the production of Gölhisar Roast, the preference is for the meat of cattle preferably raised within the geographical boundaries. The necessary components and production method for one serving of Gölhisar Roast are detailed below:

- 100 g of beef, cleaned of its sinews and fat - 100 g of inner fat - 4 g of salt

The meat taken from the egg portion of the beef hindquarters is cleaned of its fat and sinews and sliced very thinly parallel to its fibers.The fire on the stove is kindled using juniper wood, and oak wood is added to maintain and strengthen the fire. Additionally, a gas stove can also be used. The inner fat of small livestock is sliced and fried on the griddle placed over the fire. Sliced meat is added, mixed with a spatula, seasoned with salt, and removed from the stove after 7 seconds. Gölhisar Roast is served on food-safe metal plates, accompanied by tomatoes, onions, green peppers, and flatbread.
