No preservatives or additives are used in its production. Production Method:

Components for Gaziantep Pickled Green Walnut and Pepper (for a 5-liter jar): - 2 kg green walnuts (thin and firm), 1 kg peppers (preferably red peppers grown within the geographical boundary) - 1-2 cloves of garlic - 400-700 ml vinegar - 2-2.5 liters water - 220-300 g iodine-free rock salt - 100-140 g lemon salt - 20-30 g chickpeas (optional)

Preparation of Gaziantep Pickled Green Walnut and Pepper: Peel the garlic, cut off the top part. Wash and dry the green walnuts and peppers. Trim the tips of the green walnuts, then cut them into halves or thirds, with lengths of 10-15 cm. Hold the peppers by the stems, cut them in a crescent shape from the bottom round part or place them on a cutting board, and cut the seeds lengthwise into two equal parts. Place the prepared garlic, green walnuts, and peppers in a 5-liter food-safe glass or plastic jar. If chickpeas are used, place them at the bottom of the jar. In a separate bowl, mix water, iodine-free rock salt, vinegar, and lemon salt, then pour it into the jar, covering the green walnuts and peppers. Close the jar lid and let it sit in a cool, dark place for 1-2 weeks. When the color of Gaziantep Pickled Green Walnut and Pepper turns completely yellow, it is ready for consumption. Store the pickles in a cool place or in the refrigerator.
