Erzurum Stuffed Turnip

Erzurum Turnip Stuffed Dish is a dish produced by placing filling between slices of turnip, which are sliced in a circular shape and boiled. The filling consists of minced meat, rice, onion, garlic, basil, black pepper, red pepper, and salt. It is prepared by cooking with tomato paste sautéed in butter. The dish is served hot and optionally topped with garlic yogurt.

Erzurum Turnip Stuffed Dish has a long history and holds a significant place in the culinary culture of Erzurum province. Therefore, it has a distinct connection with the geographical region.

Production Method:

Ingredients for 4-5 servings of Erzurum Turnip Stuffed Dish: For the filling: - 1 kg turnips - 500 g minced meat - 70 g rice - 1 medium-sized onion - 3 cloves of garlic - 3 g basil - 4.5 g black pepper - 6 g red pepper flakes - 16 g salt For the sauce: - 30 g butter - 18 g tomato paste

Turnips are sliced in a circular shape with a thickness of 5 mm. They are boiled in water for 10 minutes and drained. Allow them to cool.

For the filling, mix minced meat, rice, and other ingredients in a bowl. Take approximately 30-40 grams of the prepared mixture and shape it flat. Place it between two slices of turnip. Arrange the prepared stuffed turnips in a pot.

In a pan, melt butter and add tomato paste to sauté. Pour the mixture over the stuffed turnips. Add water until it covers the stuffed turnips. To prevent them from falling apart, cover with a plate, then cover the pot, and cook for 25-30 minutes.Erzurum Turnip Stuffed Dish is served hot. Optionally, it can be topped with garlic yogurt.
