1- Positive Fruity Characteristics: Edremit Olive Oil exhibits fruity characteristics perceived through the nose and palate, including (but not limited to) flavors such as green almond, golden apple, vanilla, flowers, banana peel, grass, green, green fruity, hazelnut, fresh walnut, ripe fruity, soft fruity, artichoke, tomato. At least one or more of these fruity characteristics must be present in the same sample, and they are perceived at a low (<3.0) or moderate intensity (<5.0-5.5).

2- Kinesthetic Characteristics: Viscosity: Edremit Olive Oil, obtained from Edremit (Ayvalık) variety olives grown within the Edremit geographical boundaries, stimulates sensory receptors in the mouth during tasting, creating a light, flowing, and generally described as "water-like" characteristic sensation. This feature is the most important distinguishing and defining criterion for the Edremit variety.Sweetness: It is the characteristic taste-sensory sensation obtained from oil extracted from fully matured olives. The olive oil from the Edremit district, derived from ripe olives, leaves a pleasant, mildly sweet sensation on the palate, with low intensity (<3).

3- Bitterness/Pungency Characteristics: Bitterness: Perceived through taste receptors located especially on the upper surface of the tongue, it can be described as a black pepper-like bitterness.
