Product Description and Distinctive Features:

Elazığ Çedene Coffee is a coffee substitute made from the fruits of the terebinth tree (Pistacia terebinthus L.), which grows wild in the mountainous areas of the Elazığ province. The fruits are dried in the sun, roasted, and then ground to create a dark brown, paste-like coffee alternative with a high oil content. It has a woody and spicy flavor.

The microclimate created by the rivers and the Keban Dam in Elazığ, where a continental climate is observed, allows the terebinth trees to grow naturally in the wild. The altitude of 1067 m in the mountainous and rocky areas of Elazığ, along with the deep and alkaline soil structure, as well as the duration of exposure to sunlight in the region, meets the physiological needs for the growth, development, and maturation of the terebinth.

The fruits, which grow without the need for agricultural processing, ripen between October and November. Elazığ Çedene Coffee has a high oil content, ranging from 35% to 50%, due to the terebinth fruits grown in Elazığ. The product is processed without the use of additives. The dry matter content of the product should be between 75% and 85% by weight.Elazığ Çedene Coffee is preferably consumed by brewing with water or milk. When brewed, it has a structure that completely dissolves.

In the medical book "Kenzü’s-Sıhhatü’l-Ebdâniyye Eser-i Mürşid-i Osmâniyye," prepared for Sultan Abdulhamid II by Tarsuslu Tabip Osman Hayri Mürşit Efendi in 1881, there is mention of çedene coffee being made in the Elazığ region. It holds significant importance in the culinary culture and economy of the Elazığ province, thus having a geographical association with its reputation.

Production Method:

The çedene fruit, which grows naturally within the geographical boundaries, is hand-harvested when it ripens and turns green-blue, usually between October and November depending on climate conditions. The collected fruits are washed and left to dry in the sun for 2-3 days. The dried fruits, without the addition of any additives, are roasted until they reach a light brown color without becoming bitter. The roasted fruits are then either pounded in a stone mortar or ground in a stone mill machine. As a result of this process, Elazığ Çedene Coffee, which turns into a paste due to its high oil content, is preserved in glass jars.

Since the product is rich in oil, a layer of oil may form on the top. Therefore, it is stirred before use to achieve a homogeneous consistency.Consumption of Elazığ Çedene Coffee (One cup): One cup of water or milk (65-80 g), two teaspoons of Elazığ Çedene Coffee (10 g), and optionally two teaspoons of sugar (10 g) are placed in a saucepan. The mixture is cooked over medium heat until it boils and then consumed.
