Devrek Komeci


Description and Distinguishing Features of the Product:

This product, produced in almost all villages and the town center of the Devrek district, is a pastry traditionally consumed within the family on special occasions such as religious holidays, engagements, weddings, and offered as a treat to guests visiting the home. Today, it has become a commercial product sold in local markets in the Devrek region, still made using traditional methods.

Devrek Komeci

The characteristic elements that give this product its unique features are the two main ingredients: the walnuts grown in the rural areas of Devrek and the wheat known as local wheat in the region. The wheat known as local wheat is of the Flamura 85 type, which closely resembles its characteristics. Devrek Kömeci/Devrek Walnut Kömeci, with its traditional flavor that has been known for years, is a regional product made from dough kneaded with the crushed interior of walnuts grown in Devrek and the wheat referred to as local wheat, mixed with water and milk. It is made both leavened (especially sourdough) and unleavened.

Production Method:

1. Ingredients
1 kg of flour, 600 ml of water, 200 ml of milk, 100 ml of yogurt, 20 g of salt, 1 egg, 100 ml of liquid oil (natural or refined olive oil), 500 g of crushed walnut kernels; for brushing on top: 1 egg yolk, 10 g of Nigella seeds, 10 g of sesame seeds. Flour: A mixture of whole wheat flour ground from local wheat and hard wheat flour known as "has un" in the region. Walnut: A type of walnut with thin shells, easily cracked, known in the region by the name "koz," cultivated in places such as Kozlugüney, Kozlukadı, Kozludere, Kozluçay.

Preparation of the Dough:
After sifting the flour, a well is formed in the middle. Salt and egg are added to the well, and gradually the mixture is kneaded by adding water and milk while stirring. Once the kneaded dough reaches the consistency of a soft earlobe, the kneading process is continued for about fifteen to twenty more minutes to allow the dough to rest, covered with a cloth for about ten minutes.

After resting, the dough is divided into three or four pieces (referred to as "pazi" or "beze"), and each separated piece is kneaded again. It is covered with a cloth again and left to rest for another approximately ten minutes.The rested and well-kneaded dough pieces are rolled out with a rolling pin made from the branch of a cornelian cherry (kiren) tree. The thin sheets are brushed with liquid oil and stretched again with the help of a rolling pin. This process both thins the dough and ensures that olive oil is well absorbed into the dough.

The oiled sheets are sprinkled with plenty of crushed walnuts, and the oily sheets with walnuts are rolled into a spiral shape.Care is taken to ensure that the walnuts used are from the previous years (referred to as "bıldır" in the local dialect) and have a taste that is not rancid or moldy.After greasing a beaten copper tray with liquid oil, the rolled dough is placed on the tray in a spiral shape.It is baked in a preheated oven at 175-200°C for about an hour, with beaten egg yolk, Nigella seeds, or sesame seeds, or a mixture of both, sprinkled on top.

Cardboard Box
Devrek Kömeci/Devrek Walnut Kömeci will be presented in boxes made of recyclable paper or weathered chrome cardboard. The outer surface of the box will be matte cellophane. In the design on the box (with the condition of not being smaller than the brand designation), partial lacquer, embossing, or other suitable techniques will be used.

The boxes may come in two different sizes. (The size of the 1 kg box is 215x120x40 mm, and the size of the 500 g box is 120x110x35 mm). The box will contain information such as the description of Devrek Kömeci/Devrek Walnut Kömeci, the ingredients and their nutritional values, production and expiration dates, serial number, storage conditions, barcode, and statements like "Does Not Contain Lard."Packaging PaperThe packaging paper that wraps the cardboard box will also feature arrangements such as the geographical indication label, brand designation, text, photo, and logo (not smaller than the brand designation).
