Çatalzeytin Hazelnut Sugar is a confectionery produced by coating roasted first-grade hazelnuts with syrup, flour, and starch, heated in a copper cauldron. This sugar, requiring skillful craftsmanship, has been produced in Çatalzeytin since 1918 and is renowned in the region.

Production Method:

The ingredients required to produce 20 kg of Çatalzeytin Hazelnut Sugar are as follows: - 5 kg roasted first-grade hazelnut kernels (Hazelnuts should not be cracked or broken.) - 10 kg white sugar (Compliant with the Turkish Food Codex Sugar Regulation.) - 10 liters of water - 5 kg flour (Compliant with the Turkish Food Codex Wheat Flour Regulation.) - 2 kg starch - 2 lemons

A rotating copper cauldron with a thickness of 3 cm is heated over medium heat. Hazelnuts are placed in the cauldron and heated for 20 minutes. A ladle of syrup, obtained from sugar, water, and lemon, is poured into the cauldron. Then, one ladle of flour and one tablespoon of starch are sprinkled slowly, and the mixture is continuously stirred and heated in the rotating cauldron for 10 minutes. This process is repeated for 4 hours. The continuous rotation of the cauldron prevents the hazelnuts from sticking together. After 4 hours, the production process is completed, and the Çatalzeytin Hazelnut Sugar is taken out of the cauldron and spread on a marble surface to cool. After 2 hours, it is placed in airtight packaging and made ready for sale.
