Çankırı Egg Dessert is a syrupy dessert that has become synonymous with Çankırı province, traditionally made by the local people and enjoyed for many years. It is a sweet variety particularly prepared for guests by the local community after iftar meals during festive occasions, especially during Ramadan. This famous dessert is a staple on the menu of the traditional feast meal, known as the "takım yemeği," prepared by the local residents. In recent years, it is also produced and sold in local pastry shops in Çankırı, catering to weddings and special events, and can be custom-made upon request.

Production Method:

Ingredients (for 24 servings): - 15 fresh eggs - 6 tablespoons (2 cups or 200 grams) sifted flour - 1 teaspoon butter For the Syrup: - 6 cups sugar - 6 cups water - 2 drops lemon juice

Separate the egg whites and yolks. Beat the egg whites with a mixer until they reach a thick consistency. The beating process continues for 10-12 minutes at the minimum setting of the mixer. The mixing bowl should be inverted without the mixture falling when done. In a separate bowl, beat the egg yolks and add them to the previously beaten egg whites, then continue beating a little more. Next, sifted flour is poured over the mixture, and the beating process continues. After a two-minute beating process, pour the mixture into a glass dish and bake in a preheated oven at 175 degrees Celsius for 35 minutes. The baking dish should be approximately 27x40 centimeters according to this recipe or a 30 cm diameter glass or copper container. The oven door should not be opened during the baking process. After allowing the dessert to cool for a while, it is sliced and poured over the previously boiled and cooled syrup.
