Production Method:

Ingredients for the Dough: - 200 g special-purpose wheat flour - 1 egg - 3 g salt - 60 ml water Ingredients for Cooking: - 2 liters water - 11 g salt - 14 ml sunflower oil Ingredients for Topping: - 300 g yogurt - 2 cloves garlic - 90 g butter - 1 egg - 4 g ground red pepper

In a bowl, mix flour, egg, salt, and water, and knead until a firm dough is obtained. Let the kneaded dough rest for 5 minutes. Roll out the dough with a rolling pin to a thickness of 1 mm, and cut it into squares of 2x2 cm. Squeeze the center of each square with both hands to give it a bow tie shape.The shaped bow-tie dough is dried on a clean cloth for a week and can be stored in cloth bags for later use.

After adding salt and sunflower oil to boiling water in a pot, the bow-tie-shaped dough is added and cooked for 10-12 minutes.The boiled dough, taken off the heat, is allowed to rest for 5 minutes. Half of the water in the pot is discarded and not used.In a bowl, yogurt and crushed garlic are mixed. Then, 100-120 ml of the remaining water in the pot is added and stirred into the mixture.
