Bucak Salebi is obtained by drying and grinding the thickened, tuberous roots of terrestrial orchids belonging to the Orchidaceae family. After being ground into a powder, it is packaged and offered for sale. Bucak Salebi is used in the beverage and ice cream industry.The tubers of the plant from which Bucak Salebi is obtained are dried where they are collected, and they are ground into a powder using mills with a production method specific to the geographical region. Bucak Salebi, with its long history, is uniquely associated with the geographical boundary.

Production Method:

1. Crushing: Since the dried salep is very hard, it cannot be directly ground. Therefore, the dried salep is first passed through a crusher to break it into very small pieces. Typically, crushers called "çekiçli" crushers are used for this purpose. 2. Grinding: The salep, broken into very small pieces, is ground in a stone mill. The ground salep has a consistency between flour and semolina, appearing as a powder. 3. Screening and Cleaning: After the grinding process, the obtained salep is sieved to remove any large pieces that could not be ground. This step ensures that any unground large particles are cleaned, and they are ground again if necessary.

4. Mixing: The musilage (glycomannan) content of the powdered salep is measured and adjusted to the specified ratios provided in Table 1. 5. Packaging: Bucak Salebi is sold in cloth bags or plastic bags according to demand. Additionally, it is packaged in small units, labeled, and offered for sale. 6. Preparation of Bucak Salebi as a Ready-to-Drink Beverage: Ingredients: - 1 liter of whole milk - 70 g powdered sugar - 7 g Bucak Salebi Bucak Salebi is mixed with sugar in a container. In another container, the mixture of salep and sugar is gradually added and stirred into boiling milk. The cooking process continues until the milk reaches a thick consistency, which takes approximately 15-20 minutes.Bucak Salebi can be served plain or sprinkled with cinnamon on top.
