Beypazarı Carrot Delight is a fruity delight made from boiled and mashed carrots. It has a low gel-like appearance, low gloss, a matte-orange color, a smooth texture, coated with coconut, and is approximately 2 cm in cube size.

As Beypazarı has been a significant carrot production center throughout history, the carrot delight, with its long-standing tradition, holds a special place in the culinary culture of the district. This has formed a geographical connection between Beypazarı Carrot Delight and its reputation.

Production Method:

Preparation of Carrot Puree: Traditionally, locally grown and harvested carrots are used in production. The carrots are cleaned, washed, and after boiling in a cooking pot for about 1 hour, they are transferred to a chopping machine to be turned into puree.For the production of approximately 100 kg of Beypazarı Carrot Delight, the components are as follows: - 55 - 60 kg carrot puree - 75 - 80 kg white sugar - 55 - 60 liters drinking water - 7.5 - 8 kg natural cornstarch - 100 - 120 g citric acid

In a cooking pot, white sugar, water, cornstarch, and citric acid are placed and brought to a boil. Once boiling begins, the carrot puree is added to the mixture and cooked for 6 - 7 hours. After the cooking process is complete, the delight mass is poured onto trays with a thickness of approximately 2 cm and left to rest at room temperature for at least one day.

A countertop is completely covered with coconut shavings, and the rested delight mass is placed on the countertop. The coconut shavings are distributed to cover the entire surface of the delight mass. The cutting is done using a special cutting blade with a metal edge attached to a wooden tip. The delights are cut into cubes of 2 cm and their surfaces are coated again with coconut shavings.Beypazarı Carrot Delight can be stored for 6 months in food-grade packaging at a temperature of 15 - 16 °C in a dry environment.
