The main ingredient of this sweet soup, which dates back centuries and is abundantly grown in the region, is rosehip. It is typically served during holidays and weddings. The soup also contains yellow and black raisins, gendime (ashure wheat), dried figs, apricots, plums, dates, hazelnuts or walnuts, and cloves. Production Method: Ingredients: - 1 kg dried rosehips - 50 g dried yellow raisins - 50 g dried black raisins - 1.5 kg powdered sugar - 100 g dried figs - 100 g dried apricots - 100 g dried plums - 50 g currants - 250 g hazelnuts or walnuts (for serving) - 200 g ashure wheat (soaked overnight, then cooked and drained) - 200 g flour - Cloves (as desired) Instructions: Dried rosehips are placed in a pot, enough water is added to cover them, and they are cooked until softened. The cooked rosehips are mashed, and the juice is strained through a sieve. Pre-cooked ashure wheat is added to the strained liquid. Flour is mixed with water until it forms a thick mixture, then added to the pot. All remaining ingredients are added to the pot along with enough water to cover the mixture. The mixture is stirred and cooked until it boils. It is then left to cool. The sweet soup is served with crushed hazelnuts or walnuts.
