Bayburt Kavut Soup

One of the rich dishes in the local cuisine is Bayburt Kavut Soup. This soup, unique to the region, is made with kavut (a type of flour obtained by roasting and finely grinding wheat), roasted meat, butter, water, and salt.

Due to the favorable agricultural and livestock conditions in the land structure of Bayburt province, all the ingredients used in making Bayburt Kavut Soup are sourced locally.

Bayburt Kavut Soup, produced across generations and continuing its existence to this day, is well-known among the famous soups of the region.

Production Method:

Ingredients and approximate measurements: 6 tablespoons of kavut, 1.5 liters of cold water, 2 tablespoons of butter, 500-750 grams of roasted meat, and 1.5-2 teaspoons of salt.

6 tablespoons of kavut are mixed with approximately 1.5 liters of cold water. Then, about 2 tablespoons of butter and 500-750 grams of small pieces of roasted meat are added. The mixture is simmered over low heat, stirring for about 15 minutes. After it boils, 1.5-2 teaspoons of salt are added, and it continues to boil while stirring for another 5 minutes.
