Battalgazi Hashish Mulberry Pestili : Product Description and Distinguishing Features Dating back to the year 1928, Battalgazi Haşhaşlı Dut Pestili (Battalgazi Poppy and Mulberry Molasses Sheet) is associated with a geographical boundary and has a reputation link. The local people refer to the product as "bastık."Battalgazi Haşhaşlı Dut Pestili has a soft texture, and in its production, ingredients such as mulberry syrup, poppy seeds, milk, flour, starch, water, apricot kernel, inner hazelnut, inner walnut, and sesame are used. It does not contain any additives. Production Method: To produce 150 kg of Battalgazi Poppy and Mulberry Molasses Sheet, a minimum of 60 kg of mulberry syrup, at least 30 kg of milk, at least 20 kg of starch, at least 10 kg of flour, at least 10 kg of poppy seeds, at least 5 kg of walnut kernels, at least 5 kg of hazelnut kernels, at least 5 kg of apricot kernels, at least 5 kg of sesame, and at least 30 kg of water are used. For the syrup used in the production of Battalgazi Poppy and Mulberry Molasses Sheet, freshly harvested mulberries are cleaned and washed, removing leaves and stems. They are filled into cloth bags to crush the mulberries and extract their juice. The filtered mulberry juice is boiled in a cauldron to obtain the syrup. The pH value of this syrup should be between 5-5.5, and the total ash content should not exceed 3-4%. These values are ideal for making molasses sheets. A portion of the obtained mulberry syrup is mixed with some flour and some starch, then beaten. In a separate container, the remaining flour and starch are beaten with milk and water. Then, these two mixtures are combined and left to simmer. The resulting mixture is called "bulamaç" (pulp), to which some poppy seeds are added, making it ready for spreading. After this stage, the pulp is evenly spread on clean cloths that do not allow the passage of feathers or any other substances on iron grates. The thickness of the spread molasses sheet should be between 0.5 mm and 2.0 mm. Poppy seeds, walnut kernels, hazelnut kernels, apricot kernels, and sesame are sprinkled on top of the spread pulp, and it is left to dry in a hygienic environment. After the drying process, the molasses sheet is flipped on a clean surface, and the back of the cloth is moistened with a little water before separating the molasses sheet from the cloth. Subsequently, a second drying process is performed, lasting between 10 minutes and 1.5 hours. After this drying process, starch is sprinkled between the layers of molasses, and it is folded. Battalgazi Poppy and Mulberry Molasses Sheet should be stored in a moisture-free place that does not receive direct sunlight. If stored at room temperature, it should be consumed within three months; if stored at 5-10°C, it should be consumed within six months.
