Şam böreği (Damascus pastry) is a type of pastry that has been made and enjoyed by the local people in the Southeastern Anatolia region for many years. Various regions prepare Şam böreği in their own unique ways. The Şam böreği made in the Batman province has become synonymous with the region and is one of the most preferred foods by the local people and tourists alike.

Production Method:

Ingredients for Batman Şam Böreği: For the Dough: - 1 kg flour - 1 egg - 1 tablespoon yogurt - 1 tablespoon vegetable oil - 250 ml lukewarm water - 10 grams salt For the Filling: - 1 kg lean ground meat - 5-6 medium-sized onions - 1 bunch of parsley - 10 grams red pepper flakes - 10 grams black pepper - 10 grams allspice - 10 grams salt - 300 ml sunflower oil

Preparation: The flour is mixed with the egg and kneaded. Then yogurt, vegetable oil, lukewarm water, and salt are added, and the mixture is kneaded thoroughly. After kneading, the dough is allowed to rest for 30 minutes.Onions and parsley are finely chopped. Then, the onions are sautéed in oil in a pot. Lean ground meat is added on top and cooked. Finely chopped parsley, red pepper flakes, black pepper, allspice, and salt are added, and the mixture is left to cool.

The rested dough is divided into walnut-sized equal parts and rolled out with a rolling pin to be 10 cm in diameter. After distributing the filling in the center of the rolled-out dough, it is folded in a crescent shape. Vegetable oil is heated in a pan, and the pastries are fried until both sides turn golden brown. After frying, they are allowed to rest on a plate with paper towels to drain excess oil. Once this process is applied to all pastries, they are ready to be served.
