Bartın Ağda Tatlısı (Bartın Sugaring Sweet) is a white, paste-like dessert prepared with soapwort root, crystal sugar, citric acid, and water.The production of Bartın Ağda Tatlısı initially began in the village of Ağdacı. Traditionally, it was produced and sold in mobile wooden crates in the streets, gradually spreading to the entire Bartın region and gaining fame as Bartın Ağda Tatlısı.

Production Method:

Preparation of Soapwort Extract:To separate soapwort root from soil and eliminate its bitterness, the roots are soaked in water for 2 nights.Ingredients: - 2 kg soapwort root (roots of plants from the Caryophyllaceae family, such as Radix saponariae Albae sive L.) - 40 liters of water

Add 40 liters of water to 2 kg of soapwort root and boil for 1 hour. Enamel-coated copper cauldrons are used for boiling. Continue boiling for 60 minutes until the temperature inside the cauldron reaches 115°C, then let it steep. After steeping for 1.5 - 2 hours, when the mixture takes on the color of light tea, the soapwort extract is ready for use. Remove the soapwort roots from the mixture, strain the liquid through a fine sieve or cheesecloth. The obtained liquid is then whipped into foam with a peeled reed for 1 - 1.5 hours. To check the consistency of the foam, take a small amount with a wooden paddle; if the foam easily falls off the paddle without sticking, it has reached the desired consistency.

Preparing the Syrup: - 20 kg white granulated sugar - 2 liters of water - 20 g citric acidIn an enamel-coated copper cauldron, add white sugar and citric acid, and cook on the stove until the temperature reaches 110 - 115°C for 50 - 60 minutes. To check the consistency of the syrup, take a small amount with a wooden paddle and drop it into a small amount of water. If the mixture remains in a heap without dispersing, the syrup is ready to combine with the foam. Let the syrup cool for 30 - 40 minutes.

Making Bartın Ağda Tatlısı:Add the cooled syrup to the prepared foam and stir with a wooden paddle for 1.5 - 2 hours. In the final stage, the product should have a paste-like consistency, be sticky, and have a white color. Bartın Ağda Tatlısı is presented for sale in containers suitable for food contact.
