Due to the abundant growth of pumpkin and walnuts in the climatic conditions of the Bartın region, this dessert has been produced for generations. The distinctive feature of Bartın Pumpkin Roll Sweet / Bartın Kabak Burma Tatlısı is the method of placing the filling made of pumpkin and walnuts inside the rolled-out phyllo, arranging them in a spiral shape on a tray, baking them, and then pouring syrup over them. This method is specific to the region, and that's why it became famous with the name of the region.

Production Method:

Ingredients: For the dough: - 1 kg flour - 3 eggs - 500 ml lukewarm water - 250 g starch For the filling: - ½ small pumpkin - 250 g (a bowl or a cup) chopped walnuts - 250 g margarine or butter - 250 g granulated sugar For the syrup: - 750 g (3 cups) granulated sugar - 600 ml water - ½ lemon

Making the dough: First, break 3 eggs into the flour and knead it with enough lukewarm water until you obtain a dough with a consistency similar to the lobe of an ear. After resting for 10 minutes, divide the dough into 5 equal parts, roll out the dough in a phyllo shape using 250 g of starch evenly, spread it on a cloth, and let it rest again.Preparing the filling: Peel the skin of the sweet pumpkin and clean the inside. Grate the pumpkin with a coarse grater. Squeeze the grated pumpkin between two hands to remove excess water. Mix the squeezed pumpkin with chopped walnuts and a cup of granulated sugar, prepared by pounding in a mortar.

Making Bartın Pumpkin Roll Sweet / Bartın Kabak Burma Tatlısı:Each phyllo is individually cut in half, and the filling, divided into five equal parts, is placed on the longer side. It is tightly rolled to form a cylinder. Starting from the center, it is placed in a circular shape on the pre-greased tray. Other phyllos are arranged in the same way, filling the tray in a sequential manner. Melted margarine or butter is drizzled over the top, or if available, it is brushed on. Bake in a preheated oven at 180°C without using the fan function, until both the top and bottom are golden brown, for about 45-50 minutes.

Making the syrup: In a deep pot, 750 g of sugar and 600 ml of water are added. Stirring continuously over the stove for 15 minutes until the sugar dissolves, it is then boiled for an additional 30 minutes. Add 1-2 drops of lemon juice and boil for another 5 minutes. Then, turn off the heat and let the syrup cool.After removing the pumpkin roll from the oven and letting it cool slightly, pour the pre-prepared cold syrup over it. Cover it with a cloth to allow the sugar to be absorbed.Once Bartın Pumpkin Roll Sweet / Bartın Kabak Burma Tatlısı has cooled, it is cut into square or diagonal pieces and is ready to be served.
