Ardahan Flower Honey


Product Description and Distinguishing Features:

Color: Transparent, having a glossy appearance, the color of the honey varies from light amber to dark amber, depending on the season's dry or rainy conditions or the impact of frost on the natural vegetation. It is usually yellowish, sometimes khaki, based on the color of the flower from which the bee collects nectar.

Taste: It has a pleasant taste derived from the aromas of the honey plants in the region, leaving a mild burning sensation in the throat.Aroma: It possesses the aroma of honey derived from honey plants grown in the region.Consistency: It has a fluid consistency. Filtered honeys crystallize into a homogenous creamy structure after approximately two months at room temperature, or earlier under storage conditions below room temperature.

Bee Race: One of the most important factors that bring out the characteristic features of Ardahan Flower Honey is the bee race, which is the "Caucasian bee (Apis mellifera caucasica)." The Caucasian bee race has the longest proboscis (6.7-7.2 mm) among honey bees. With this feature, it effectively exploits the nectar sources of deep-tubed flowers (mainly Boraginaceae and Fabaceae families), which are prevalent in Ardahan, and particularly benefits from the tri-leaf flower, which is a common deep-tubed plant. It can work in low temperatures and unfavorable climatic conditions. It has a tendency to irregularly build bridge combs. Due to not leaving air gaps between honey and wax while sealing the comb cells, comb honey has a dark and moist appearance.

The characteristics of the Caucasian bee race are determined by the Ministry of Agriculture and Forestry's Regulation No. 2004/39 on "Registration of Domestic Animal Breeds and Lines." In line with the directives of the Ministry of Agriculture and Forestry, to preserve the breed characteristics of the Caucasian bee, Ardahan province has been designated as an "isolated zone," closed to bee entry from other provinces except Artvin. The implementation of the regulation is carried out in collaboration between the Caucasian Bee Production, Training, and Gene Center Directorate and the Ardahan Provincial Directorate of Agriculture and Forestry.

The Caucasian bee race has a weak ability to winterize in cold climate conditions. Due to the harsh winter conditions in Ardahan, honey producers who do not have the necessary conditions winter their bees in regions with milder microclimate conditions in Artvin. Honey producers in Ardahan with suitable conditions for wintering, providing a humid-free, ventilated, closed, and sheltered environment, spend the wintering period in Ardahan and its districts. Beekeepers who winter their bees in Artvin and come to Ardahan during the working season have their accommodation determined by the Ardahan Governorate. Fixed beekeepers in Ardahan, during the working season, stay on their own lands suitable for Ardahan Flower Honey production or in areas designated by the Ardahan Governorate
