Arapgir Pestil Kavurması/Arapgir Bastık Kavurması is a dessert produced in the Arapgir district of Malatya province, using dried mulberry pulp (dut pestili), eggs, unsalted butter, and crushed walnuts. In the Arapgir district, the pestil product is also known as "bastık," "bastuk," or "bastığ."

Having a deep-rooted history within its geographical boundaries, Arapgir Pestil Kavurması/Arapgir Bastık Kavurması holds a significant place in the culinary culture of the Arapgir district. Therefore, there is a geographical and reputational connection to its origin.

Production Method:

Ingredients for making Arapgir Pestil Kavurması/Arapgir Bastık Kavurması for 4 people:
- 150 g dried mulberry pulp - 2 eggs - 50 g unsalted butter - 100 g crushed walnuts

Preparation:
The dried mulberry pulps are cut into approximately 1.5 x 2 cm cubes with a knife or scissors and separated into leaf-like pieces by hand. The cut pulps are washed in warm water to soften them.In a bowl, unsalted butter is melted. The softened pulps, after squeezing out excess water by hand, are added to the melted butter and sautéed for 1-2 minutes. Eggs are then added, and the mixture is stirred until the eggs are cooked, continuing to sauté for another 1-2 minutes. Crushed walnuts are sprinkled over the mixture, and the Arapgir Pestil Kavurması/Arapgir Bastık Kavurması is ready to be served.
