Production Method: Ingredients: - 1.5 kg pumpkin (slice width approximately 7 cm) - 600 g granulated sugar - 100 g double-roasted tahini - 100 g walnuts - Half a lemon Procedure: For the production, pumpkins grown in the village of Camili in the Döşemealtı district of Antalya province are used. The tahini used on the dessert is obtained from sesame produced in the Manavgat district of Antalya. The pumpkin is sliced, and the tough outer peel is removed. The peeling process is crucial and requires skill. If the thick white membrane on the pumpkin is left, it becomes tough during cooking, and if it is too thin, the pumpkin may fall apart. Each slice of the used pumpkin is divided into three equal parts. The sliced pumpkins are placed in 600 g of sugar and left to soak for 12-24 hours. During the sugaring process, to give clarity to the pumpkin and prevent the sugar from crystallizing, the juice of half a lemon is added. The sugared and soaked pumpkin is cooked on low heat on the stove for approximately 2-3 hours by turning it upside down in its own juice. The foam formed during cooking is removed to preserve the taste and color of the dessert. The condensation of sugar and the acquisition of a thick consistency indicate the completion of the cooking time on the stove. The cooked pumpkins are transferred to a tray and baked in a preheated oven at 175 °C for 15-20 minutes until the top is golden brown. Double-roasted tahini is poured over the top, and it is served at room temperature with sprinkled walnuts.
