Akşehir Tandoor Kebab is a traditional dish associated with the Akşehir district of Konya province, reaching from the past to the present. It is a regional dish made using the tandoor cooking technique, where lamb meat is cooked with fruitwood (oak) in stone ovens heated with specific embers of the region.

The history of Akşehir Tandoor Kebab dates back to the Seljuks. In particular, in the Seljukname, which mentions the Seljuks, the term "biryan" is used for the dishes eaten at a feast given by I. Alâeddin Keykubad in the month of Shawwal in the year 634 (May 1237). Biryan means "kebab," and thus, there is a reference to Akşehir Tandoor Kebab among the dishes of the Seljuk period.

Production Method:

Ingredients: - Lamb meat (front leg and back part) - Lamb fat - Salt - Water

In the production of Akşehir Tandoor Kebab, the front leg and back part of the lamb are used. These parts are cut into small pieces and placed in copper pots. After adding salt according to the amount of meat, the previously melted lamb fat is added to the pot along with its own fats.The kebab is cooked in a stone oven (tandoor). The type of wood used during the cooking process is crucial. Fruitwood (oak) is the preferred wood. After preparing the pots, the previously burned stone oven and the embers inside are allowed to turn into coals. Once they turn into coals and the stone oven reaches a temperature of 200°C, the pots are placed in the oven. The essential and important aspect of the cooking technique of Akşehir Tandoor Kebab is cooking the meat on embers.

The pots are taken out of the oven and turned upside down every 15 minutes during the cooking process. This process takes about 5-6 hours. After this time, the pots are removed from the stone oven and left to rest. After resting for approximately 1 hour, it is ready to be served.Presentation:Akşehir Tandoor Kebab is served on pita bread, sliced with a knife, and can be served with varying levels of fat content: lean, moderately fatty, or fatty according to preference. Generally, it is presented with sliced raw onions, tomatoes, and roasted peppers on the side.
