After boiling, it is served with a sauce made of garlic yogurt, butter, red pepper flakes, and tomato paste. The köfte has a flat, round button shape with a diameter of approximately 1.5 cm. It can be consumed either hot or cold. Preparation and Cooking of the Meatballs: Peeled onions are grated into a bowl. In another bowl, an egg is cracked. In yet another bowl, fine bulgur (düğü) and crushed wheat (göce) are soaked in hot water, and salt and dried mint are added. After letting it rest for 10 minutes, the grated onion, flour, and egg are added to the rested mixture, and it is thoroughly kneaded by hand for about 15 minutes. To prevent the meatball mixture from drying out during kneading, if necessary, a cup of warm water is added. If kneading is not done properly, the meatballs may fall apart during boiling. When the kneading process is complete, the color of the mixture becomes a light milky brown. From the prepared mixture, meatballs are rolled into approximately 1.5 cm-sized balls, lightly pressed in the middle to give them a button shape.
