Afyonkarahisar Goce Meatballs


Product Description and Distinguishing Features:

Afyonkarahisar Göce Köfte / Afyon Göce Köfte; produced by boiling köfte (meatballs) prepared with düğü (fine bulgur), göce (crushed wheat), onion, egg, flour, dried mint, salt, and water. After boiling, it is served with a sauce made of garlic yogurt, butter, red pepper flakes, and tomato paste. The köfte has a flat, round button shape with a diameter of approximately 1.5 cm. It can be consumed either hot or cold.

Afyonkarahisar Göce Köfte / Afyon Göce Köfte, a part of the culinary culture of Afyonkarahisar with a long history, is present in various occasions such as birth ceremonies, condolences, weddings, military farewells, circumcision ceremonies, etc. It is closely associated with a geographical boundary and holds a reputation for its unique characteristics.

Preparation and Cooking of the Meatballs:

Peeled onions are grated into a bowl. In another bowl, an egg is cracked. In yet another bowl, fine bulgur (düğü) and crushed wheat (göce) are soaked in hot water, and salt and dried mint are added. After letting it rest for 10 minutes, the grated onion, flour, and egg are added to the rested mixture, and it is thoroughly kneaded by hand for about 15 minutes. To prevent the meatball mixture from drying out during kneading, if necessary, a cup of warm water is added. If kneading is not done properly, the meatballs may fall apart during boiling. When the kneading process is complete, the color of the mixture becomes a light milky brown.

From the prepared mixture, meatballs are rolled into approximately 1.5 cm-sized balls, lightly pressed in the middle to give them a button shape. After adding salt to boiling water in a pot, the meatballs are placed in it and boiled for about 30 minutes. The boiled meatballs are removed with a skimmer, placed on a plate, and allowed to drain.

Sauce Preparation:

Butter, red pepper flakes, and tomato paste are sautéed in a pan. Garlic is crushed and mixed with yogurt.The drained meatballs are placed in a plate or containers suitable for contact with food.
