Afyon Ilibada Wrap


Product Description and Distinguishing Features:

Afyon İlibada Roll / Afyon İlibada Stuffed Grape Leaf / Afyonkarahisar İlibada Roll / Afyonkarahisar İlibada Stuffed Grape Leaf; This product is prepared by wrapping the leaf of the Rumex Patienta plant, which belongs to the Polygonaceae family and grows on a single stem, with a mixture of fine bulgur (düğü) and crushed wheat (göce) as the main ingredients, in a triangular (muska) shape. The length of the roll is approximately 3 cm.

Afyon Ilibada Wrap

The Rumex Patienta plant is known as "ilibada" in Afyonkarahisar province, and its leaves have been used for making rolls due to their slightly sour taste for many years. Afyon İlibada Roll / Afyon İlibada Stuffed Grape Leaf / Afyonkarahisar İlibada Roll / Afyonkarahisar İlibada Stuffed Grape Leaf holds a special place in the gastronomy of Afyonkarahisar due to its unique production method, and therefore, it is closely associated with a geographical boundary.

To the pot where liquid oil is added, finely chopped onions are added and sautéed until the onions are caramelized. Flour is added to the pot, and stirring continues. In another bowl, the previously thoroughly mixed bulgur (düğü) and crushed wheat (göce) are added to the sautéed mixture along with some water, and the mixing process continues. While this mixture, which forms the filling of the roll, is cooking, salt, dried mint, and red pepper are added.

In a different pot, the ilibada leaves are lightly blanched, and optionally, the central vein of the leaf is removed by splitting it into two. The prepared filling is placed on the split leaf, and it is rolled in a triangular (muska) shape and transferred to a separate plate. The rolls are prepared in approximately 3 cm sizes.

Once the rolling process is completed, the rolls are carefully placed in a pot for cooking. Subsequently, water is added, and the pot is covered, allowing it to cook for approximately 40 minutes.

Sauce preparation and presentation:

For serving, strained yogurt, garlic yogurt, or tomato paste/tomato sauce can be added on top of the placed rolls according to preference.

Strained yogurt sauce: Added plain. Garlic yogurt sauce: Garlic is crushed and added to yogurt. Tomato paste/tomato sauce: Heat oil in a pan, add tomato paste/tomato, mix for a while, and finally, add mint and red pepper.
