Afyon Cream


Product Description and Distinctive Features:

Afyon Clotted Cream is obtained from buffalo milk. Buffaloes are fed with grasses derived from the flora of the geographical location and characteristics of the Afyon province, as well as poppy (haşkes) pulp and other oily seeds (such as sunflower, cotton, etc.). This imparts a unique flavor and aroma to the milk obtained from buffaloes and, consequently, to the clotted cream.Afyon Clotted Cream is a dairy product containing at least 0.5% protein, 0.5% carbohydrates, 0.5% ash, 60% fat, and 65% dry matter.

Production Method:

Buffalo milk is transferred to clotted cream pans made from materials approved for contact with food after being filtered. It is then boiled at low heat up to 92°C and left to cool on its own for at least 4 hours. During this process, the tops of the clotted cream pans should be covered with clean cheesecloth or a similar fabric to absorb the sweat. After this step, the clotted cream pans are placed in a cold room at a minimum of 4°C and left there for at least 12 hours. Subsequently, the clotted cream pans are removed from the cold room. Using a tool made of stainless steel, sharp-pointed and sharp-edged, the layer of clotted cream is separated from the pan. The remaining clotted cream is collected by overturning it in the milk and then packaged with the help of hands.
