Production Method:

For the production of Adapazarı Pumpkin Dessert, Adapazarı White Chestnut Pumpkins weighing between 13-15 kg, and having completed their normal development, are used. The pumpkin is initially sliced at the node level and then peeled with a knife. After cleaning, it is sliced into pieces measuring 7-9 cm in length and 3-6 cm in width. The pumpkin pieces, separated into small parts, are washed with drinking water to remove peel and seed fragments. After washing, the sliced pumpkin pieces are not left exposed or at room temperature to prevent the texture of the product from being compromised. Half the weight of the pumpkins in white sugar and one-third of the volume of the pumpkin pieces are sprinkled over them, covered, and left to rest in the refrigerator for about 24 hours.

In a cooking container, the rested pumpkin pieces are placed, and drinking water equal to half the weight of the pumpkins is added to start the cooking process. During the cooking time, the remaining two-thirds of the white sugar are evenly sprinkled at intervals over the pumpkin. The cooking process should not exceed 25-30 minutes; otherwise, the pumpkins become too soft and fall apart.

At the beginning of the cooking process, the sugar, water, and pumpkin mixture can be stirred, but interference should not be made later. Stirring later may cause the pumpkin to break apart.Adding 2-3 cloves during cooking enhances the flavor of the product.The lid of the container is kept closed while the pumpkins are cooking. In the last 10 minutes, the lid is opened to release the steam.

After the pumpkins are cooked, they can optionally be baked.
