Adapazari Keskek With Darts Product Description and Distinguishing Features: Adapazarı Dartılı Keşkek is a local dish prepared and served on special occasions such as weddings, circumcision ceremonies, and holidays.The distinctive features of the product are that it is made with chicken meat, and it includes a special sauce called "dartı" prepared with clarified butter, red pepper, and black pepper, unique to the Adapazarı region. Production Method: The ingredients used in making Adapazarı Dartılı Keşkek include 6-7 liters of milk, 1 whole chicken, ½ cup of coarse wheat (used for making ashura), 1 medium-sized onion, ½ teaspoon of salt, 3/2 liters of water, 2 tablespoons of butter, a pinch of black pepper, and a pinch of red pepper. Preparation of Dartı (Sauce): Before boiling 6-7 liters of milk, it is allowed to stand for 1.5-3 hours. The layer of fat formed on top is removed and collected in a pot. The slightly fatty layer in the pot is boiled on low heat until it turns red. During this process, the consistency of dartı thickens, and pores (craters) form on its surface. Dartı is removed from heat when its surface turns red and pores appear. It is poured into a container and left to solidify. The fat part remains on top, and the sediment settles at the bottom. This resulting product is called dartı and is an essential component of Adapazarı keşkek. Making Adapazarı Dartılı Keşkek: 0.5 kilograms of crushed white wheat with kernels removed are prepared. Approximately 10-12 hours before starting the preparation of keşkek, the wheat is washed, soaked, and allowed to swell.The next day, a whole chicken is boiled in water until the meat becomes very tender, approximately 1.5 hours. After boiling, the chicken is removed from the pot. On the other side, the soaked wheat is added to the chicken broth prepared the night before. It is boiled on the stove, stirring with a wooden spoon 1-2 times. If the water is insufficient, enough water is added to cover it, and ½ teaspoon of salt is added. The warm chicken bones are separated. The chicken is finely shredded and added in small matchstick-sized pieces to the boiled wheat.The boiled ingredients are mashed with a wooden spoon to mix the wheat and meat.
