Adapazari Islama Meatballs


Product Description and Distinguishing Features:

The distinctive feature of the product is the soaked bread with sauce served alongside the meatballs. The soaked bread is made from beef broth, red pepper flakes, vegetable oil, and stale bread (leavened dark oven bread). After soaking, the bread slices are fried. Another distinguishing feature is the serving of grilled meatballs on top of these fried bread slices.

Production Method:

Meatball Ingredients:
1 kg minced beef 1 medium-sized onion 80 g crumbled stale bread 10 g cumin 10 g black pepper 10 g red pepper flakes 30 g salt Soaking Water Ingredients: Thinly sliced and leavened stale dark oven bread 1 kg beef broth 50 g red pepper flakes 100 g vegetable oil Salt

Preparation of Beef Broth:
Thick beef bones (especially rib and shank bones) are broken in half and placed in a large cauldron with 12 liters of water, along with 2 large onions. It is boiled over low heat for approximately 12 hours. After passing through a cheesecloth (to eliminate bone fragments), pure beef broth is obtained.

Grilling:
Oak charcoal is preferred. Wait for the burning charcoal to turn white on top.

Garnish:
2 medium-sized slightly grilled tomatoes (1/4 of a tomato used for each portion) 8 mildly grilled pointed peppers (1 pepper used for each portion)

Procedure:
Grate the onion into the minced meat. Add the spices, and crumble the bread into it. Knead by hand until it reaches the desired consistency. Let it rest for at least 1 hour. Shape by hand into portions of 10 each (total of 80 pieces) and place them sequentially on the grill.Mix red pepper flakes, vegetable oil, and salt into the beef broth. Dip the bread into the soaking water and place it on the grill. Remove from the grill when slightly browned and place 2 slices on a serving plate. Place 10 pieces of grilled meatballs on the bread slices on the plate. Serve with lightly grilled tomatoes and peppers on top.Optionally, soaked meatballs can be served with piyaz (bean salad), grape syrup, or ayran (yogurt drink).
