Pucuko Product Description and Distinguishing Features: Puçuko is a regional dish specific to Artvin. It takes its name from the locally dried string beans, known as "puçuko". This dish is particularly prepared during the winter months.Puçuko is made from fresh beans separated from the pods of beans collected and sun-dried during the summer months. To prepare Puçuko, dried beans are first boiled, and then tomato paste and bulgur (or aşurelik wheat) are added before cooking. Production Method: The following ingredients are used in the preparation of Puçuko. The proportions of the ingredients can be adjusted based on the production quantity.Ingredients: - 1/2 cup bulgur or aşurelik wheat - 1 large bowl dried green beans (approximately 1/2 kg) - 1 large onion - 1 coffee cup vegetable oil - 1 tablespoon butter - 1 tablespoon tomato or pepper paste - 1 teaspoon (level) salt Optional: - 1 teaspoon dried mint - 1 teaspoon red pepper flakes - Vinegar or lemonIn the preparation of the product, dried green beans are soaked for 12 hours and then boiled. After draining the boiling water, they are transferred to a large pot. Washed bulgur or aşurelik wheat, enough water to cover, and salt are added. It is brought to a boil together (over medium heat). While this process continues, the seasoning of the dish is prepared. At this stage, onions are finely chopped and sautéed in vegetable oil until they turn pink. Tomato or pepper paste is added. This mixture is added to the boiling dish without stirring. Finally, butter, dried mint, and red pepper flakes (optional) are heated and added to the dish.Optionally, during serving, it can be consumed with vinegar or lemon poured on top, or simply as it is.
